Orange Cake

You’ll use a whole orange, skin and all, for this cake. Sounds crazy, but it works! You can serve it plain (it’s great ice cold) or with a simple glaze of confectioners sugar and orange juice.

Ingredients

  • 1/4 lb butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 pint sour cream
  • 1 whole medium orange, ground in food processor
  • 1 tsp baking soda
  • 2.5 cups sifted cake flour
  • 1 tsp vanilla

Instructions

Set oven at 350 degrees. Grease and lightly flour a 9"" square pan. Cream together butter and sugar. Beat in eggs, sour cream, orange (with juice), and soda. Add flour and blend well. Add vanilla. Bake for 40 minutes or until done
